Goldenrod Eggs 2 tablespoons butter 2 tablespoons flour 1 cup milk ˝ teaspoon salt 4 hard boiled eggs In a small saucepan, over medium heat, make a white sauce by melting butter, adding the flour and stirring in the milk. Stir until the sauce thickens. Chop the whites of the hard-boiled eggs, and crumble the yellow to a fine consistency. Add to sauce and serve on toast. The yellow that is spread over the egg is the "goldenrod" part. my grandmother used to make this for me. Wonderful! I think it was popular in the 1920's.

I chose scrambled well and in a casserole. I also prefer them for dinner than breakfast. I missed the omlet choice. Oh, and scrambled eggs should look very different than an omlet with no filling: they should be mixed before cooking and then scrambled while they are cooking so they are fluffy and loose not in a big egg sheet.

Perfectly hard cooked eggs that aren't rubbery with bright yellow, not green, yolks.... Cover eggs with cold water. Bring to a boil. REMOVE FROM HEAT! Cover and let sit 15 minutes. Rinse with cold water to stop cooking.

I also like egg salad sandwiches, and deviled eggs. Not for breakfast, however.

I love eggs. workdays - egg mc muffin type sandwiches. weekends - omelettes, scrambled, eggs with toast (medium) I'll even make quiche once in a while.

Favorites: Smoked salmon scramble - onions, red bell peppers, green bell peppers, hash browns and eggs thrown into a skillet with some good smoked salmon added at the end. 2nd favorite - smoked salmon benedict. Substitute smoked salmon for the canadian bacon. Lived in salmon country in Seattle long enough to develop a taste for that.

My vote is "scrambled lightly". I pour the eggs into a bowl discarding shells. Mix in bowl so that all eggs are poured in together. None gets a head start on the heat. A bare minimum of vegetable oil is preheating in the pyrex skillet. Heat until lightly scrambled and dress to taste which may include salt, black pepper and/or louisiana hot sauce.

My favorites: -Cheesy Eggs (Lightly Scrambled with Shredded Cheese) -Matzo Brie (Fried Matzo mixed together with Lightly Scrambled Eggs) -Mexican Eggs (Fried Corn Tortillas mixed together with Lightly Scrambled Eggs, Salsa and Shredded Cheese) -Over Easy or Boiled and Runny on toast

Does anyone eat eggs sunny-side up anymore? Due to health risks, I know some eateries won't serve them that way.

Scrambled well Over medium (whites fully cooked and yolks fully runny) Omlette with a lot of cheese Huevos Rancheros Chorizo and Eggs Chilequiles
