Need Sugar Free/Low Sugar Cookie Recipes - 10/30/2008 9:51:35 PM

Christmas is coming and I need some sugar free/low sugar cookie recipes to serve family members who cannot eat sugared foods. Since I'm also unable to eat sugar anymore, but LOVE eating Christmas cookies, this would be a good time for me to experiment with some recipes before our family celebration on Christmas Eve. I welcome any help you can give me. Thank you.

Would you prefer recipes that use artificial sweetener or honey? I'm pretty sure any cookie recipe that calls for sugar, you can sub with artificial sweetener. If it called for brown sugar, you can make your own with molasses and artificial sweetener.

Can you/they have fructose (the fruit sugar)? My sister bakes for my dad with that. Otherwise you have a few directions you could do in. You could use an artificial sweetener like sucralose (be careful some sucralose is mixed half and half with sugar). You could use a natural sweetener (but still a sugar) like honey, agave, or fructose. You could use fruit or other ingredients to sweeten the cookie second hand (by adding applesauce or bananas for instance).

Peanut Butter Cookies 1 cup peanut butter, creamy or crunchy 1 1/3 cups baking sugar replacement (recommended: Splenda) 1 egg 1 teaspoon vanilla extract How To Prepare: Preheat the oven to 350 degrees F. Grease a large baking sheet. In a mixing bowl, combine the peanut butter, 1 cup sugar replacement, the egg, and vanilla, and stir well with a spoon. Roll the dough into balls the size of walnuts. Place the balls on the prepared baking sheet. With a fork, dipped in sugar replacement to prevent sticking, press a crisscross design on each cookie. Bake for 12 minutes, remove from the oven, and sprinkle the cookies with some of the remaining sugar replacement. Cool slightly before removing from pan. Yield: 18 cookies Prep Time: 15 minutes Effort (Easy, Average, Difficult): Easy Cheesecake Cookies 2 pkg cream cheese, softened (16 oz) 1 egg 1/2 tsp vanilla 3/4 cup Splenda small pinch of salt How To Prepare: Beat softened cream cheese with the egg, add the vanilla, salt and Splenda. Drop by spoonfuls onto a lined, sprayed cookie sheet. Bake at 350 until the edges are browned-about 12 min. They will puff, then fall, when they begin to wrinkle on the top, they are ready. Remove from cookie sheet and place onto cooling racks. Store in an airtight container. Number of Servings: Usually about 60 cookies

Also take some time to explore the Taste of Home website, ESPECIALLY any recipe from their Healthy Cooking magazine (formerly Light and Tasty). I'm soon to be leaving buy I'll see if I can find some later. Garsy
