This thread is for sharing your cooking tips, recipes and other food related things, as well as challenges singles have preparing meals for one.
If you have kids, you can also share how you balance meal preparation and everything else in life.

I think this thread is a great idea. Unfortunately, most of the cooking I do involves the microwave and prepackaged meals.
One thing I like to do is mix things up. Like sometimes I'll bring home some leftover chicken from a dinner or something, and I'll mix that with unseasoned ramen noodles, throw in some of my own spices, and have something new.
Nothing special. I look forward to seeing other people's culinary delights.

I try to avoid prepackaged meals, but I do use them sometimes. I will follow the recipe and make a full batch of whatever. That will last for several meals, but I never eat the same thing two days in a row.

A sandwich may be egg or cheese or even peanut butter, But they all taste so good to me it doesn't even matter; Jam or ham or cucumber, any kind will do. I like sandwiches, how about you??

I LOVE my crockpot. I just recently bought one of those smaller ones and it's perfect. Sometimes because I'm at work all day and when I get home I'm tired and because no one is counting on me to fix a decent meal, it's easy to not make healthy choices sometimes. But when you come home and the crock pot has done the cooking all day...what a wonderful thing! I have three crockpot cook books that I haven't even really looked through much but it seems like there's much more you can do than I've ever thought of.

OK. So I am so not a cook.
BTW, I don't use the kitchen crock pot for stripping paint. It's M's and she would have killed me. Now she'd just haunt me. I figure she's far too busy praising Jesus to have time to come down here and starighten me out so I had better stay on my best behavior

Hmmm...that sounds very interesting Nadine. I don't think I've ever seen anything like that. I'll have to keep an eye out for it. I hardly make pancakes just because it's kind of a messy hassle for just me...something like that might be fun to try out.

A few years ago I found one of those pancake skillet things. They are a two piece skillet on a hinge, Instead of flipping the pancake, you just turn the skillet over.

Making pancakes for one is fun and easy. Prepare the batter in a large Pyrex-type bowl that has a pouring lip (minimal mess). Pour enough batter to make a couple of flapjacks. When they're done, place them on a plate, butter them up, and dig in. While enjoying the cooked ones, start another round.
(It helps to have an extra large skillet.)
Admittedly, I eat too many when I cook them this way since I'm a pancake piglet. Pancakes are, therefore, a rare but delicious treat!

Yeah, pancakes are pretty easy. I have a 2-cup Pyrex that'll make enough batter for my son and I. And, since I love pancakes so much, I bought a flat cast-iron skillet. When I first started making pancakes, I could never get them right. But with time and practice, they come out perfectly now.

I've found that the key while cooking is to wait until the batter bubbles in the middle before making the flip.

True they are easy and I have been making them since I was about 8. However I can't tell you the excitement at not having to wash the bowl, silly I know, And they are organic and delicious. And no, I don't own the company.LOL

I prefer waffles to pancakes, but I will never turn down pancakes. When I do make them, the first couple turn out really bad.
My mom has a cast iron (I think) omelet pan that hinges so you can turn it over. I'm not so sure how well that would work.
I was going to make a salad tonight, but I discovered I was out of balsamic vinegar. I can't have salad without it. I may break down and use apple cider vinegar instead and see how that tastes.

I made a discovery tonight that's pretty tasty and handy for singles. The last time I was at WalMart they had this package of individually wrapped portions of salmon I think there's about 4-6 portions in a package. I wasn't sure if it would be any good because sometimes those commercially packaged meats can taste kind of funky, but I tried it out tonight and it was really tasty. I like it because you can take out just a portion and bake it. I did that and steamed up some veggies and had a very tasty dinner.
