Kerr since this is a turkey thread could you tell me how long it will take to defrost an eighteen pound Turkey, a good stuffing receipt, & how long to roast the bird in the oven. Thought I'd ask early as you may have to ask the lovely Mrs Kerr for help with the directions. Thank you for the info. I'm sure it will help all of us.

I looooooooove oyster dressing. I'm looking forward to Thanksgiving. I'm thankful for Thanksgiving. BBFan's recipe sounds very similar to what our family has always done, but lately (since I do what I do) I have substituted the Pepperidge Farm mix with my own blend. I grind the organic heirloom wheat and bake the bread and slice it and dry it and crumble it and season it. The rest of it is pretty much the same. With lots of sage.

It also leaves a bunch of turkey broth. We put some in the dressing and freeze the rest for making soup.
