Kerr since this is a turkey thread could you tell me how long it will take to defrost an eighteen pound Turkey, a good stuffing receipt, & how long to roast the bird in the oven. Thought I'd ask early as you may have to ask the lovely Mrs Kerr for help with the directions. Thank you for the info. I'm sure it will help all of us.

put into 9X13 baking pan and bake at 400* until brown on top (30mins or so)...cut into squares and serve.

This is my Grandmother's recipe that has been used for many many many years and as per the generation...exact measurements weren't used. In recent years we have added the Pepperidge Farm stuff to substitute for the multiple cakes of cornbread needed.

what is a cake of cornbread??
My mother and grandmother grew up in NC...that is NC speak for pan of cornbread!!!
We use to bake our's in a cast iron frying pan...but I now use either a 9" round cake pan or an 8X8 square. If using cornbread without Pepperidge Farm stuffing mix...you would need at least 2 for a 9X13 pan.

I looooooooove oyster dressing. I'm looking forward to Thanksgiving. I'm thankful for Thanksgiving.

BBFan's recipe sounds very similar to what our family has always done, but lately (since I do what I do) I have substituted the Pepperidge Farm mix with my own blend. I grind the organic heirloom wheat and bake the bread and slice it and dry it and crumble it and season it. The rest of it is pretty much the same. With lots of sage.

I usually buy my turkey about 5-7 days in advance frozen and leave it in the refrigerator so it is thawed by the time I need it!!
If not thawed the night before I leave in the sink....I know I know not the recommended thing to do but so far I haven't had any turkeys go bad and poison anyone! I also don't put dressing inside the turkey.
Also...I usually freeze any left over cornbread from a couple months previous and use it in dressing too.

Yep. A big soup pot, about 6 or 7 gallon. It'll hold a 20# turkey.

It also leaves a bunch of turkey broth. We put some in the dressing and freeze the rest for making soup.
