SO this will be my first Thanksgiving Dinner I am making ever. I hope to make my new hubby (and parents) happy with my first one. lol Ok, so, my mom is making and bringing the mashed taters and yams. But I get the turkey, stuffing and side dishes.

Be specific. Brainstorm. Share!

I don't think making Thanksgiving dinner is very hard...there's a lot of cleanup but most of it you can get done ahead of time so there's not much prep work all day. Get the turkey in the oven in the AM. You can peel potatoes in put them in water early in the day. If you make green bean casserole that goes quickly. Have any other veggies in the pan or however you cook them.

PIes can be assembled early and even baked in the morning. If you make rolls from scratch they can be made ahead of time and frozen raw. Then just set them out to thaw/rise and bake when it's time.

Then, when it's almost time to eat you can turn on the potatoes and veggies. You can probably bake rolls when you take the turkey out to carve it.

Set the table (or at least set out the dishes) in the AM. Then you can enjoy your company until maybe 45 minutes before

Just be sure to remove the lil wax paper filled with giblets BEFORE you bake the turkey.

My mom is the baker of all desserts and I do the rest now. I just don't have the patience for pie crusts and such.

I like sweet tater casserole and butternut squash - can't decide whether we'll have both the squash and mashed taters or just the squash.

And I can make several things the day before like the pea salad and any fruit we may have as well.

Ok, so I think what I will do with this thread is divide it into sub-sections. First things first...

The Turkey

How are you making your turkey this year? I'm thinking of brining mine. I would imagine that you don't need much else for it if it's brined...maybe a little butter.

I usually put a turkey breast in the crockpot the night before for extra white meat at dinner...put it in the pot frozen at about 11 pm, smack some butter over it, cover it and if the lid doesn't go down all the way I put a dishtowel over it till it cooks enough to seal the lid then cook it till about noonish.

For the main turkey, we have a friend who fries them for us...yummy yummy

Do you have Whole Foods there, Above All? I get a fresh Brined Kosher Turkey there nearly every year. They are extraordinary...a little pricey, but delicious!!!

Kat, they just opened their first store near where I live. And when you say Kosher you mean free range and organic?

William Sonoma also has a brine mix. Their recipe calls for adding buttermilk. I know I can make my own though too.

To stuff with dressing or not to stuff?

I thought so...I think I mentioned to you before that my sister lives where you do and I thought she said they were getting a Whole Foods. Hooray!!

Yes they are organic and free range.

I know they do make brine mixes and I thought of doing one myself too, but those Whole Food birds are fantastic!

I always stuff my turkey and make a big pan of stuffing besides...it's the most popular side dish at my house.

Thanksgiving this year is going to be a difficult adjustment. Traditionally it's a gorging feast. This will be my first turkey day with diabetes. Portion control and carb counting will be strictly observed. I refuse put myself in a situation where I have to use insulin again.

same here 'cept it was last year...I ate turkey, a small spoonful of stuffing (cornbread variety), small spoon of butternut squash and lots of green beans and other veggies.

I definitely had my fill and it was really good. However, I was probably the only one NOT taking a nap that afternoon.

Don't like oysters either. lol

Kat you are really wanting me to get that turkey from Whole Foods. I think I'll check it out more.

Ok I also have to make the dressing. MMMMMM! I know there are many recipes out there. What are you doing this year? Hubby loves it with sausage. I wanna see what's out there though. I may make a cornbread stuffing or maybe a sourdough one. I'm one of those that likes fruit inside like apples or apricots. Hmm?

cranberry relish/sauce
and it just depends on what else we get requests for...

Doink what a spread! How many people will be there?

And a smoked turkey is good too. Here, a few Elementary schools have fundraisers for Thanksgiving. The set up a Hawaiian imu (underground oven) and you can bring in your turkey to get cooked and smoked. It's delish! I will definitely try that one year.

If it's too late to order a Turkey from Whole Foods then I will try the William Sonoma Brine. It's called Apple and Spice brine.

As for sides, I was thinking roasted brussel sprouts. It takes way better roasted than just cooked on the stove! I may also make something with green beans. I also LOVE pea salad doink!

It's not to late to get a fresh brined turkey turkey at Whole Foods, Above All. Just go over there and pick one up.

For Thanksgiving this year, I am serving:

Hors Devours:
Caviar served on Blinis with Chopped Egg, Chives, Shallots, and Sour Cream
Dinner:
Turkey with Savory Dressing
Mashed Potatoes
Turkey Gravy
Sweet Potato Casserole (made with pineapple, mini marshmellows and pecans)
Green Beans with Toasted Almonds
Fresh Corn
Homemade Cranberry Sauce
Relish Tray
Dessert:
Bread Pudding
Pumpkin and Apple Pie

My two daughters and my son-in-law are coming, along with my sister and her son from San Francisco. My brother and his wife may be coming for dessert and I also invited the 3 bachelors next door if they have no where to go.

Can't wait!!!!
